Ingredients

ground beef (80/20 lean-to-fat ratio)

ground pork

breadcrumbs

milk

small onion, finely chopped

cloves garlic, minced

large eggs

cup
ketchup (plus ¼ cup for topping)

Worcestershire sauce

dried thyme

tsp
salt

tsp
black pepper

finely chopped bell pepper or carrots
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet or grease a 9x5-inch loaf pan.
Soak breadcrumbs in milk for 5 minutes.
Mix beef, pork, breadcrumbs, onion, garlic, eggs, ¼ cup ketchup, Worcestershire, thyme, salt, pepper, and optional veggies.
Shape into a loaf on the baking sheet or press into the loaf pan. Top with ¼ cup ketchup.
Bake 60-70 minutes until internal temperature is 160°F (71°C).
Rest 10 minutes before slicing.
Notes
Don’t overmix to keep the meatloaf tender.
Use a thermometer for perfect doneness.
Bake on a sheet pan for crispier edges.
Store in fridge for 4 days or freeze for 3 months.
