- 1½ lbs fresh green beans, trimmed and cut
- 4 tbsp unsalted butter
- 1 small onion, finely diced
- 8 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- ¼ cup all-purpose flour
- 1½ cups whole milk
- ½ cup heavy cream
- 1 tsp soy sauce
- ½ tsp salt
- ¼ tsp black pepper
- 1½ cups fried onions
- ½ cup Optional: shredded cheddar cheese
Blanch green beans for 5 minutes; cool in ice bath
Sauté onion, mushrooms, and garlic in butter
Stir in flour; whisk in milk and cream until thick
Add soy sauce, salt, pepper, and optional cheese
Mix in green beans; transfer to a baking dish
Top with fried onions; bake at 375°F for 20-25 minutes
