- 2 lbs russet potatoes, peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium broth

- ½ tsp black pepper
- ½ tsp dried thyme
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled (optional)
- 2 tbsp fresh chives, chopped
- ¼ tsp smoked paprika
Add potatoes, onion, garlic, broth, salt, pepper, thyme, and paprika to crockpot
Cook on low 6-8 hours or high 3-4 hours
Mash or blend to desired texture
Stir in cream, cheese, and half the bacon
