Crockpot Potato Soup Recipe: Creamy Comfort in a Bowl

Ingredients
  

  • 2 lbs russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium broth
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 tbsp fresh chives, chopped
  • ¼ tsp smoked paprika

Instructions
 

  • Add potatoes, onion, garlic, broth, salt, pepper, thyme, and paprika to crockpot
  • Cook on low 6-8 hours or high 3-4 hours
  • Mash or blend to desired texture
  • Stir in cream, cheese, and half the bacon
  • Adjust seasoning; garnish with chives and bacon
  • Serve hot

Notes

  • Use russet potatoes for creaminess
  • Warm the cream before adding
  • Store in fridge for 4 days or freeze for 3 months
  • Serve with bread or salad
