- 1 ½ lbs boneless skinless chicken breasts
- 1 medium onion diced
- 3 medium carrots sliced
- 3 celery stalks sliced
- 3 cloves garlic minced
- 8 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp salt
- ¼ tsp black pepper
- 1 bay leaf
- 2 cups egg noodles
- 2 tbsp fresh parsley chopped
- Optional: 1 tbsp lemon juice
Add chicken, vegetables, broth, and seasonings to the crockpot
Cook on low 6-8 hours or high 3-4 hours
Shred chicken; return to crockpot
Add noodles; cook on high 15-20 minutes
Remove bay leaf; add lemon juice
Garnish with parsley; serve
