Crockpot Chicken Noodle Soup Recipe: Hearty Classic Comfort

A hearty, classic chicken noodle soup with egg noodles, ideal for comforting meals.

Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 1 medium onion diced
  • 3 medium carrots sliced
  • 3 celery stalks sliced
  • 3 cloves garlic minced
  • 8 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 bay leaf
  • 2 cups egg noodles
  • 2 tbsp fresh parsley chopped
  • Optional: 1 tbsp lemon juice

Instructions
 

  • Add chicken, vegetables, broth, and seasonings to the crockpot
  • Cook on low 6-8 hours or high 3-4 hours
  • Shred chicken; return to crockpot
  • Add noodles; cook on high 15-20 minutes
  • Remove bay leaf; add lemon juice
  • Garnish with parsley; serve

Notes

  • Use low-sodium broth
  • Add noodles at the end
  • Store in fridge for 4 days or freeze without noodles for 3 months
  • Serve with bread
