ripe bananas, mashed (about 1 ½ cups)

plain Greek yogurt or sour cream

chopped walnuts or chocolate chips
Instructions
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
Mash bananas in a large bowl. Stir in melted butter, sugar, eggs, vanilla, and yogurt.
In another bowl, mix flour, baking soda, and salt.
Combine wet and dry ingredients, stirring until just blended. Fold in mix-ins, if using.
Pour batter into pan and bake for 55-65 minutes, until a toothpick comes out clean.
Cool in the pan for 10 minutes, then transfer to a rack.
Notes
Use very ripe bananas for the best flavor.
Don’t overmix batter to keep bread light.
Add cinnamon or nuts for extra flavor.
Store at room temperature for 3 days or freeze for 3 months.
